This module provides Master's students in Human Nutrition and Dietetics with comprehensive knowledge of parasitology and virology essential for food safety and public health. This course explores fundamental concepts in parasitology and virology relevant to food science and human health. Topics include parasite biology and pathogenicity, viral structure and classification, clinically significant viruses (hepatitis, HIV, respiratory viruses, arboviruses), and modern diagnostic approaches for parasitic and viral pathogens. Students will acquire essential knowledge for ensuring food safety and understanding infectious disease risks in nutrition and public health contexts.
